Chilli, anchovies and olives. These are the ingredients of La Gilda, the first genuine pintxo of San Sebastian. The story of La Gilda begins in the 40s in the Casa Vallés, a classic bar in the old town of San Sebastian.

Rita Hayworth was the sex symbol in that time and despite censorship in Spain after the Civil War, the movie Gilda made it through and to this day Rita Hayworth is an icon here.

In Casa Vallés, they started to combine olives with chilli and anchovies skewered on a stick and decided to call the invention Gilda, because it was also green, salty and a little spicy, just like Rita Hayworth in Gilda.
